Plum cake with yogurt and spelt flour

This super easy Plum cake is incredibly soft and moist, perfect for breakfast or afternoon tea. A combination of plums, cinnamon, and spelt flour gives this cake a more rustic, warm note, and the yogurt adds more fluff to the texture. The recipe is easy to follow and can be adapted to any seasonal fruit of your choice and enjoyed all year around.

August is almost over, and for me, this also means the end of summer. The city is still empty, with everyone being on vacation, but the weather is changing. Over the last couple of days, it rained and the nights got chilly. September is around the corner. I have no idea where did summer go. For sure it has been a busy one. With schedules, work, catching trains and writing contents, with lots of ideas floating in the air waiting to become a reality. 

Ever since I was a child, I looked forward to September. It was a month when school was about to start when you got new books and could choose all the pencils and notebooks you want. The pages were still empty, ready for new drawings and new contents. It always felt like a new beginning — new stories to write, new friendships to make. 

Even after many years, some things remained the same. My mind is dreaming, and my heart is impatient. Fingers want to write. To mix flour and bake.

Late summer brought beautiful plums to our countryside, and last weekend I collected a full basket. I wanted to get enough for some homemade marmalade and cakes as wild pigs have been visiting us at night and enjoying the produce of this sweet tree. Sometimes you can even hear them munching, just around dinner time. 🙂 

When I was a child every September, my mother would make plum marmalade for the whole season, and we would freeze fresh fruit as we love them in cakes and for making Sweet Knodel (potato dumplings). These little rituals would announce the school, the start of colder weather, and that autumn was around the corner. 

As some traditions are always present, this September I am sharing with you my one-bowl plum cake, made with spelt flour. So soft and delicious, I am sure that this cake will be on your next to-bake list!


Plum cake with yogurt and spelt flour

INGREDIENTS

Serves 18
Prep.time: 20 minutes
Baking time: 35 minutes

For the cake 

3 larger eggs
 
125g brown sugar + 4 tbsp for plums

200g plain yogurt

125 ml sunflower oil

250g whole wheat spelt flour

2 tsp cinnamon + 2 tsp for plums

16g baking powder

300g plums, cleaned and cut in quarters


  

METHOD



Wash and dry your fruit and then cut it in quarters. Place your plums in a smaller bowl, add 4 tbsp of brown sugar and 2 tsp of cinnamon. Stir and leave aside. Preheat your oven at 180 degrees Celsius. In a large bowl, with a hand mixer beat eggs and sugar until foamy. Add sunflower oil and yogurt. Mix again. Add flour, baking powder, and cinnamon and mix again with a wooden spoon or whisk.

Grease and flour your pan (I used a  30x16cm rectangular pan). Pour the cake mixture into the pan.
Take a smaller plate and pour some flour. Pass each plum through the flour and arrange them over the cake batter. In this way, your fruit will not drown to the bottom of the pan and will actually stay on the surface of the cake. Bake for 30-35 minutes, or until the toothpick inserted comes out clean. Let it cool completely. Sprinkle with some powdered sugar and serve. Enjoy!
